Inspired by the Italian custom of drinking espresso with Sambuca- sweet, anise-flavored liqueur, the combination known as caffe corretto, or proper, “corrected” coffee, we made a coffee and anise distillate.
We used specialty Cogito Coffee Roasters coffee, deciding on Ethiopia for its sweetness. This coffee is collected by farmers in the Buku Sayisa region, at a high altitude, which plays an important role in the richness of flavor. The coffee is purchased under fair trade conditions.
With that coffee, a fragrant distillate came out of the still, surprising us with its sweet coffee flavor, so true to the original. In combination with anise, its smell evokes a just-opened chocolate box.
On the palate, the freshness of anise intertwines with the sweetness characteristic of Ethiopia coffee, creating a rich chocolaty and toffee bouquet with coffee lingering in the aftertaste.
We recommend Corretto to be served at room temperature (15 to 20°C), preferably after the meal, as a substitute for coffee or alongside espresso. With tonic, it makes for a very refreshing long drink, where the coffee flavor comes forward, and works wonderfully in an espresso martini. With this highly mixable drink, the options are limitless.
After exploring Italian and Istrian customs of drinking caffe corretto and searching for the best ingredients, we developed this distillate as our original recipe and idea.
Corretto is a transparent distillate- however, the maceration of coffee is so dark that it is possible that some of the color passes through the distillation and gives the finished product a tinted glow- which doesn’t interfere with the taste.
The labels come in two shapes as symbols of our Istrian environment: wave, and “bura”, the omnipresent northern wind. Monachus logo is hand-printed on each label, representing our dedication to handcraft.
